Com o Natal a caminho...

E como estamos quase no Natal, eu andei a tentar fazer Rabanadas pela primeira vez. Este Natal os sogrinhos vem visitar-nos e há que estar preparado :). Distribuí Rabanadas pelos amigos e eles gostaram ou então enganaram-me :p. A minha cozinha ficou uma bagunça e cheia de salpicos de óleo. Esta receita requer uma preparação ao longo do dia, já que temos que deixar amornar o leite e depois deixar o pão de molho algum tempo antes de passar no ovo/fritar. Para as minhas Rabanadas usei Açucar mas há quem use Mel e ainda adicione o Vinho do Porto (Nós não gostamos!). Aqui fica a minha experiência, espero que gostem...


Ingredientes

8 fatias com 2 cm de espessura de pão de cacete ou pão de forma com 3 dias
600 ml de leite
3 casquinhas de limão
pau de canela
3 colheres de sopa bem cheias de açúcar ou mel
ovos batidos
 Açúcar q.b.
Canela em pó q.b.
Óleo de girassol para fritar
Preparação:

1. Num tachinho, leve ao lume metade do leite, as casquinhas de limão, o pau de canela e as 3 colheres de sopa de açúcar.
Mexa e deixe aquecer durante 10 minutos em lume brando.

2. Passado os 10 minutos, retire o pau de canela e as casquinhas de limão.
Apague o lume e misture o restante leite frio.
Deixe arrefecer até que fique morno.

3. Regue as fatias de pão com o leite e vire-as.
Deixe repousar durante 5 minutos para que fiquem bem embebidas.

4. Passe bem as fatias de pão pelo ovo batido.
Frite-as em óleo quente.
Logo que coloque o pão a fritar, reduze o lume para médio.
A meio da fritura, vire as rabanadas para que fiquem douradas por igual.

5. Depois das rabanadas fritas, retire-as para um prato com papel absorvente.
Passe as rabanadas pela mistura do açúcar e da canela.

E estão prontas a servir.

With Christmas on the way ...

And as we're almost at Christmas, I've been trying to make French toasts for the first time. This Christmas my Parents-in-law are coming to visit us and we must be prepared :). I shared my French toasts with my friends and they liked it or they deceived me: p. My kitchen was a mess and full of oil splashes. This recipe requires preparation through the day, as we have to let the milk cool down and then let the bread soak for a while before moving into the egg / fry. For my French Toast I used sugar but some people use honey and add Port wine (We don't like it!). Here is my experience, I hope you enjoy ...


Ingredients

8 slices with 2 cm of thickness of baguette bread or Loaf bread with 3 days
600ml of milk
3 lemon peels
1 cinnamon stick
3 tablespoons very full of sugar or honey
3 eggs, beaten
 Sugar q.b.
Cinnamon q.b.
Sunflower oil for frying

Preparation:

1. In a Saucepan, let it boil half the milk, with the lemon peels, the cinnamon stick and the 3 tablespoons of sugar.
Stir and let it warm up for 10 minutes in lower heat.

2.
 After 10 minutes, remove the cinnamon stick and the lemon peels.
Turn off the heat and mix the remaining cold milk.
Let it cool until it is medium warm.

3.
 Drizzle the bread slices with the milk and turn it over.
Let it stand for 5 minutes so they stay well soaked.

4.
 Pass the bread slices in the beaten egg. 
Fry them in hot oil. 
Once you put the bread frying reduce the heat to medium. 
At half the time frying, turn the French toast so they stay evenly golden. 

5. When they're fried, remove them to a plate with paper towels.
Pass the French toasts with a mixer of sugar and cinnamon.

And are ready to serve.


Qual é o menu do dia?

Hoje, foi esta a experiência do dia um Risotto de Bacalhau e Camarão. É muito saboroso e eu adoro marisco. Considero-me apaixonada por marisco. O Risotto dá um bocado de trabalho, já que temos que adicionar a água aos pouquinhos e cozer o arroz lentamente. A água, usei a que cozi os camarões então fica muito saboroso este arroz. O toque final foi o queijo parmesão ralado que dá um gosto ótimo. Espero que gostem! :)


Ingredientes

1 lombo de bacalhau com cerca de 300g
250g de
camarão
3 colheres de sopa de azeite
1 cebola pequena picada
2 dentes de alho picados
200g de tomates maduros cortados em cubos
125 ml de vinho branco
160g de arroz para risotto
Salsa picada q.b.
Queijo parmesão q.b.
Sal q.b.
Pimenta q.b.


Preparação:

1. Numa panela com água a ferver, coloque o bacalhau e deixe cozer durante 5 minutos.
Passado os 5 minutos retire o bacalhau com uma escumadeira.
Reserve a água.

2. Entretanto, descasque os camarões.
Reserve as cabeças e as cascas.
Junte as cascas e as cabeças do camarão à água de cozer o bacalhau.
Deixe ferver durante 10 minutos.
Passado os 10 minutos, coe meio litro de caldo e reserve.

3. Depois do bacalhau frio, limpe de peles e de espinhas.
Desfie-o em lascas.

4. Numa frigideira, leve ao lume o azeite, a cebola e os alhos.
Mexa e deixe refogar.
Adicione o arroz e o tomate.
Mexa e deixe fritar até que o arroz fique translúcido.
Adicione 1/4 do caldo e o vinho branco.
Conforme o caldo for secando vá acrescentando mais aos poucos.

5. A meio da cozedura, tempere com sal e pimenta.
Junte o camarão e mais caldo.
Quando o arroz estiver quase cozido, adicione o restante caldo e o bacalhau.

6. Passado cerca de 20 minutos, depois do arroz cozido e o molho cremoso, adicione a salsa.
Misture e apague o lume.
Sirva o risotto com o queijo parmesão ralado na hora.

What's the menu of the day?

This was the experience of the day Cod and Shrimp Risotto.  It is very tasty and I love seafood. I consider myself passionate about seafood. The Risotto gives a little bit of work when making, because we have to add water little by little and let it cook slowly. The water, I used the one witch I boiled  my prawns, so the rice becomes more tasty. The final touch was a parmesan cheese grated, it gives a great taste in the end. Hope you enjoy! :)

Ingredients

1 cod loin with about 300g 
250g of prawns
3 tablespoons of olive oil 
1 small onion, chopped 
2 garlic, chopped 
200g of ripe tomatoes, diced 
125ml of white wine 
160g of risotto rice 
Chopped parsley q.b.
Parmesan cheese q.b.
Salt q.b.
Pepper q.b.


Preparation:

1. In a pan of boiling water, place the cod and simmer for 5 minutes.
After 5 minutes remove the cod and reserve the water. 

2. Meanwhile, peel the prawns. 
Reserve heads and shells. 
Add the shells and heads to the cod water that you reserved before. 
Let it simmer for 10 minutes. 
After the 10 minutes, strain half liter of the cooking liquid and reserve. 

3. When the cod is cold, clean from any skin or bones. 
And Shred it.. 

4. In a frying pan, heat the olive oil, onions and garlic. 
Stir and let it simmer. 
Add the rice and tomatoes. 
Stir and fry until the rice becomes translucent. 
Add 1/4 of the prawns broth and the white wine. 
As the rice is drying, add more of the prawns broth gradually. 

5. Halfway through cooking, season with salt and pepper. 
Add the prawns and more broth. 
When the rice is almost cooked, add the remaining broth and the cod. 

6. After about 20 minutes, when the rice is cooked and creamy, add parsley.
Stir and turn off the heat. 
Serve the risotto with fresh grated parmesan cheese.
